Cowboy Butter Steak - Cuso Cuts

If you watch my videos on TikTokYoutube, or Instagram, it quickly becomes evident that I am a sauce guy. There are so many ways that sauce can be the proverbial icing on the cake for recipes. This Cowboy Butter Steak features a sumptuous compound butter, best for dipping on the side of your beef.

You can use whatever type of steak you prefer. However, richer steaks sometimes take the whole dish over the top. The steak and sauce fight each other because they both have fatty content. This is why I’ve chosen a filet (or flank steak).

If you don’t have avocado oil, substitute olive oil. You can potentially use margarine instead of butter, but the sauce has a greasy aftertaste if you do. Ghee is a much better choice.


PitMaster’s Memo: What is Cowboy Butter?

The simplest definition of Cowboy Butter is a blend of spicy herbs and butter into a sauce. It goes together quickly, and you can certainly tinker with the basics based on your tastes. And, while you may have only heard of this blend on beef, Cowboy Sauce isn’t just for steaks. Try it with shrimp, on top of hot rolls, and as a baste for chicken. 

Historically no one really knows how the name came about. There is no way that the Cowboys were carrying around all those ingredients. So, we can only guess that “cowboy” sounded hardy, and the sauce rises to that description easily.
