Smoked Cowboy Butter

How to Make Cowboy Butter (the basic version)
I recommend using clarified butter for this recipe. If you can’t make sure to use unsalted butter.
Ingredients
- 2 cloves garlic, minced
- ¼ cup chopped chives
- ½ cup rough-cut parsley
- 1 tbsp thyme
- 2 tbsp smoky paprika
- 1 tbsp bell pepper flakes
- ½ cup Dijon mustard
- 1 cup melted butter
Instructions
- Preheat your smoker to 190F
- Mix all the ingredients thoroughly
- Transfer to an iron skillet
- Put the skillet in the smoker and close it
- Smoke for 25 minutes
- Let it cool
- Place it in the refrigerator until it starts hardening up
- Rip off some plastic wrap. Put ½ of the butter on the wrap
- Mold the butter into the shape of a tube.
- Roll the wrap-up and twist the ends
- Repeat with the other half of the butter
- Put it back into the refrigerator for use.
- You now have a smoked cowboy compound butter ready for use.
Tip: You can store the butter in the freezer for up to 6 months. If you plan on so doing, pour some of the cooled smoked butter into ice cube trays. Let it solidify. Pop-out into a food storage bag. Grab what you need, when you need it.
