Have you ever tried smoked butter (or, for that matter, heard of it)? Cowboy butter is fantastic as it is, but when you add a delicate smoky flavor, the result is a whole new level of savoriness. How can you use smoked cowboy butter? Here is some information about using smoked cowboy butter, and recipes that contain cowboy butter where you can switch out for the smoked version.

How to Make Cowboy Butter (the basic version)

I recommend using clarified butter for this recipe. If you can’t make sure to use unsalted butter.

Ingredients

  • 2 cloves garlic, minced
  • ¼ cup chopped chives
  • ½ cup rough-cut parsley
  • 1 tbsp thyme
  • 2 tbsp smoky paprika
  • 1 tbsp bell pepper flakes
  • ½ cup Dijon mustard
  • 1 cup melted butter

Instructions

  1. Preheat your smoker to 190F
  2. Mix all the ingredients thoroughly
  3. Transfer to an iron skillet
  4. Put the skillet in the smoker and close it
  5. Smoke for 25 minutes
  6. Let it cool
  7. Place it in the refrigerator until it starts hardening up
  8. Rip off some plastic wrap. Put ½ of the butter on the wrap
  9. Mold the butter into the shape of a tube.
  10. Roll the wrap-up and twist the ends
  11. Repeat with the other half of the butter
  12. Put it back into the refrigerator for use. 
  13. You now have a smoked cowboy compound butter ready for use.

Tip: You can store the butter in the freezer for up to 6 months. If you plan on so doing, pour some of the cooled smoked butter into ice cube trays. Let it solidify. Pop-out into a food storage bag. Grab what you need, when you need it.

  • Baste steaks with it
  • Mix into mashed potatoes
  • Offer it with rolls or baguette
  • Lather your grilled corn with it
  • Add to eggs
  • Toss with pasta
  • Rub it all over poultry skin before cooking
  • Use in pulled pork braising sauce
