For a while, skirt steak was an overlooked cut. Thankfully, people have rediscovered the fantastic beef flavor it produces (more than flank steak!). Skirt Steak greatly benefits from marinade for tenderness and the tastes you enjoy the most. While I’m sharing marinade here, feel free to play!
Inside and Outside Skirt Steak
When you shop for skirt steak, there are two different cuts. They have similar characteristics in that they are long, thin, and have a thick grain. Depending on the butcher, you can find skirt steak that measures 4 inches wide and a whopping 24 inches long.
Outside Skirt Steak
If you’ve ever worked with ribs, you’ll notice that skirt steak has a similar membrane. You want to remove this before you prepare it. The nice thing about outside skirt steak is that it’s reasonably uniform.
Inside Skirt Steak
The inside skirt steak falls short in terms of flavor and tenderness compared to the outside. On the upside, it’s easy on the budget. Cook it at a high temperature quickly and cut it up for whatever you want.
Skirt Steak Marinade
What type of spices can you use to marinate your skirt steak? Here are a few that create magical menus:

What About Dry Marinade?

Skirt Steak Cooking Process
Skirt steak can stick, so oil your grill grates well. Set the grill/smoker to 425F. It only takes about 3 minutes for a person to reach medium rare (13F) internally.
There’s always the option of cooking with cast iron. Follow the same timing, but you can add a bit of butter or red wine for a lush braise.
